I first had this jam in Scotland!  Local, tangy rhubarb mixed with fresh spicy ginger are the perfect combination for this delicious jam!  Serve on your morning English muffin with butter. It’s even better as a dessert topping over vanilla ice cream, or a filling for tarts.  Freeze it for a guest worthy sorbet!
